One of the things I loved the most about Round Hill was the enormous vegetable garden on the property. The garden is located at the top of the hill, a quick walk in the cool mornings-a longer walk during the heat of the day!
The gardeners grow organic vegetables and herbs that are used in the resort’s restaurants. Each bed has flowers to attract pollinators.
The greens, including lettuce and arugula, make their way into salads and even an arugula pizza. So delicious! Each morning at breakfast, I enjoyed a green smoothie featuring parsley from the garden and local fruit and veggies.
Another neat feature of the garden is the orchard made up of young mango trees. There are mango trees dotted throughout the property, many with mangoes almost ready to eat.
